Sweet Potato Salad

Ingredients:

3 Medium sweet potatoes
1 green pepper
2 celery sticks
3 spring onions
3 oz. hazelnuts
Grated fresh ginger (about half a walnut size)

4 oz organic tofu
2 tablespoons olive oil
2 tablespoons cider vinegar
1 tablespoon lemon juice
1 tablespoon dark soya sauce

Parsley for garnish

Directions:

Boil the sweet potatoes whole in their skins. While they are cooking, finely chop the green pepper, celery sticks and spring onions. Chop the hazelnuts and grate the fresh ginger.

When the potatoes are cooked, cube them and then gently mix all the ingredients together in a bowl.

Blend the next five ingredients together until smooth. Gently mix with the potato salad, garnish with parsley and serve.
