Italian Lentils

A colorful vegetarian blend that is hearty and delicious


5 Cups Water
2 1/2 Cups Lentils
1/4 tsp salt
1 tsp Italian seasoning (oregano, rosemary, basil blend)
28 oz petite diced tomatoes
1 can olives diced

1 TBS oil
3/4 C onion chopped
1/2 C celery chopped
2 cloves garlic minced

2-3 Carrots diced into 1/4” cubes
2 zucchini diced into 1/4” cubes
1/2 bunch kales cut up as fine as possible


Prepare Lentils according to the package. When they are fully cooked stir in the tomatoes and olives.

In a separate sauce pan saute the onion, celery and garlic in oil. While these vegetables are cooking, cut up the carrots, zucchini and kale. Add to the onion mixture and steam 7 minutes. Add water if necessary so the vegetables don\'t burn. When they are soft stir them into the lentils and serve.
