Orange and chocolate cream cookies
SUITBALE FOR MILK ALERGENS (optinal)
Very tasty cookie sandwiches!
225g of butter, softened
140g caster sugar
2 tsp finely grated orange rind
1 egg yolk, lightly beaten
2 tsp of vanilla extract
250g plain flour
25g cocoa powder
pinch of salt
100g plain chcolate finely chopped
2-5 tsp milk (optinal)
125 ml double cream
200g white chocolate broken into pieces
1 tsp of orange extract
Preheat the oven to 190c/375F/Gas mark 5
Put the butter sugar and orange rind into a bowl and mix well with a wooden spoon, then beat the egg yolk and vanilla extract. Sift together the flour, cocoa powder and a pinch of salt into the mixture. Add the chopped chocolate untill thourghly combined. Deppending on how dry the dough is add 2-5 tsp of milk (optinal).
Scoop up tablespoons of the dough, roll into balls and place on a greased and lined baking tray, spaced well apart. Gently flatten and smooth the tops with the back of a spoon.
Bake in the preheated oven for 10 to 15 minutes untill a light golden brown. Leave to cool for 5 to 10 minutes on the baking sheets then transfer onto a wire rack.
To make the filling, bring the cream to boil in a small saucepan, then remove from the heat.
Stir in the chocolate untill the mixture is smooth, then add the orange extract and mix. When the mixture is completely cool, use to sandwich the cookies together in pairs.
