mexican black beans

This can be eaten with rice, or inside a burrito-type food.

Ingredients:

2 tbsp. canola oil
1 small yellow onion, diced
3 cloves garlic, pressed
3/4 cup dried black beans
1 can diced tomatoes w/ green chile (I use Trader Joe\'s)
black pepper, salt to taste
cilantro to taste

Directions:

prepare beans--soak 8 hours. rinse. boil 1.5 hours (lowering heat to a simmer after 15 minutes).

cook canola oil, onions and garlic until soft. Add beans and tomatoes. Cook 15-20 minutes.

Season as desired with salt, pepper, and cilantro.
