veggie-nut burgers

the best veggie burgers ever. no wheat, gluten, dairy, egg, spices, garlic, meat.



3 cups uncooked brown rice
5 cups water
1 cup roasted cashews
1 pound roasted unsalted sunflower seeds
1 onion, chopped
10 oz. carrots, shredded/sliced/chopped
1 tablespoon extra virgin olive oil
salt and pepper to taste



Cook the rice.
Preheat your broiler. Grind the toasted cashews and sunflower seeds in a food processor. Transfer to a large bowl. Shred the onion and carrots in the food processor. Mix with the nuts. Blend the cooked rice and olive oil in the food processor until smooth. Mix with the other ingredients in the bowl. Season with salt. Make the mixture into burger-patties.
Broil 5-10 minutes on each side (until golden).
