Ratatouille--plus meat.

summer vegetable stew--i make mine with meat for more flavor and nutrition--no gluten, dairy, eggs, red spices, red pepper.


1 oven. 1 large dutch oven or large pot. Cutting board. knives. separate plate to hold meat in cooking intermission.

2 cans of (organic) tomatoes, whole is fine
1 onion
1 eggplant
3 zucchini
2 green peppers
baby carrots
olive oil (several tbsp)
TONS of chopped garlic--I never measure. 5tsp?
chicken drumsticks (I used 6, doesn\'t matter how many)


#1) chop all vegetables

#2) in a dutch oven, brown the chicken legs in a tablespoonish of olive oil. remove chicken legs and let them rest on a separate plate during the following steps:

#3) turn the heat down--add garlic to the dutch oven--add onions--turn the heat back up--brown the onions and garlic together, add peppers, a couple more tbsp of olive oil, salt and pepper. stir constantly until tender.

#4) add the rest of the vegetables and the meat to the pot. cook in the oven on 350 for an hour.
