Eggless Meatloaf

Salsa and cheese make this moist and tasty.


1 lb ground beef (or 1/2 lb ground beef and 1/2 lb ground pork)
1 egg equivalent made with Ener-G
½ small onion, diced
¼ jar of salsa
1 cup Shredded Mexican cheese
Italian breadcrumbs
ketchup for on top


Mix pork and beef.
Add onion and egg replacement.
Add cheese.
Mix breadcrumbs and salsa together . Add to meat mixture.
Top with ketchup.
Bake at 375 degrees, uncovered, for about 1 hour.
