Christmas Fudge

Egg, dairy, and gluten-free recipe (soy-free if you use Dari-Free instead of soy milk powder)--low-fat to boot! This is a take-to-parties kind of recipe, no one will guess it\'s anything out of the ordinary.


2 Tbsp. Fleischmann\'s unsalted margarine
2 1/2 cups granulated sugar
5/8 cup rice milk
2 Tbsp. soy milk powder or Dari-Free
7 or 8 oz. miniature marshmallows
1 small jar baby food prunes
1 tsp. vanilla
12 oz. vegan chocolate chips


Melt margarine in saucepan. Add sugar, rice milk, and soy milk powder (or Dari-Free). Mix over medium heat, stirring constantly, until boiling. Boil for 5 minutes. Reduce heat to low; add marshmallows, prunes, and vanilla, stirring until mixture is smooth. Remove from heat; add chocolate chips and stir until completely dissolved and smooth. Pour into greased 9x13 inch pan and chill for 2 hours.
