This is basically a spicy lentil stew that I created. The name was given to the dish by some of my students, since it doesn\'t look very appetizing, but appearances can be deceiving! You can easily substitute plain sausage for spicy if you\'re unsure about what spices they use in the meat, but it won\'t have the same effect on the finished product.
1 cup lentils
1 package (5-6) spicy italian sausage
1 package frozen or fresh spinache (2 cups fresh)
1 cup chopped mushrooms (if desired)
1 medium chopped onion
3-4 cloves crushed garlic
1 tbsp curry
1 tbsp cumin
1 tbsp black pepper
1 tbsp ginger (2 tbsp if fresh)
Soak lentils in 3 cups water overnight. Rinse and add with 3 cups fresh water to crockpot, along with all other ingredients. Cook on Low for 8 hours, adding water and stiring as needed.
