Speghetti Squash with chicken and brocolli in a vinegrette

Does not contain any of the \"big eight\", also wheat free.


1 pound chicken
1 speghetti squash
1 pound brocolli
1/2 cup oil (I used canola)
1/4 cup vinegar
lime juice


In oven:
One speghetti squash cut in half lengthwise and baked at 350 degrees for 1 hour.

On stove:

Cook one pound boneless chicken breast cut in bite sized pieces in:
1/2 cup canola oil
1/4 cup vinegar
squirt of lime juice
couple shakes of salt
Once chicken is cooked throw in 1 pound frozen brocolli, stir and cover. cook on med high until thawed.

Remove spechetti squash and use a fork to put the meat into a large bowl, dump chicken and brocolli mix into bowl and strir thoroughly.
Dump entire bowl back into the skillet and let cook on medium for aprox 10 minutes covered.
