Homemade sundried tomato chicken and salsa
Chicken with sundried tomato paste with salsa - no egg, wheat, garlic, dairy
8 chicken strips
jar of sun-dried tomatoes
4 ripe tomatoes
one medium red onion
salt and pepper
Place the sundried tomatoes and a dash of olive oil, salt and pepper in a blender and blend until a smooth paste.
Coat the chicken strips with the paste and bake in the oven for 25 minutes at 180 degrees.
In the meantime, chop the tomatoes, spring onion, and red onion into very small cubes. Combine with the lemon juice, dash of olive oil and salt and pepper.
Serve the salsa over the chicken strips and serve with a green side salad and a baked potato.
