Turkey Barley Stew
A hearty, filling soup. Easy to make and reheats well
2 large boxes chicken broth
1 c. quick cook pearl barley
1 package ground turkey meat
3 medium carrots, scraped and diced
2 celery ribs, diced
1/2 T. Italian seasoning
salt and pepper
In a soup pot, brown ground turkey and drain. Add broth, carrots, celery and Italian seasoning. Bring to a boil then simmer for 10 to 15 minutes. Add barley and simmer for 10 to 12 more minutes until barley and veggies are tender. Add salt and pepper to taste.
If you want this dish to remain soup-like, have additional broth on hand for reheating. The barley soaks up most of the broth by the next day, leaving more of a casserole than a soup, but it\'s still tasty.
