I Miss Chili Dinner

Gluten free, casein free, very low salicylate, low fat. I adapted this recipe from a chili recipe when we were testing for allergies and couldn\'t have most of the ingredients in standard chili (including chili powder). It\'s not chili, but it\'s pretty tasty. Not spicy.


2/3 cup uncooked rice pasta
3 tablespoons unrefined safflower oil
4 shallots, chopped
4 garlic cloves, pressed
2 celery ribs, chopped
1 lb ground chicken
sea salt
2 cans black beans, undrained
the juice of 4 limes (about 2/3 cup)
1/2 cup flat leaf parsley, chopped


Cook pasta according to package directions.
Heat the safflower oil in a large saucepan over medium heat. Add shallots and cook until they\'re softened. Add garlic and celery and ground chicken, season with sea salt generously. Cook until chicken is browned.
Add black beans and simmer 5 minutes.
Add lime juice and parsley and remove from heat.
Serve over rice pasta.
