Perfectly Delicious Potatoes

Potatoes are baked with herbs and celery in an aluminum foil packet. This recipe is good enough for company. Gluten free, casein free, very low salicylates. Serves a family of 5.


6 potatoes, peeled and sliced (1/4\" slices)
Unrefined safflower oil
4 garlic cloves, minced
1-2 shallots, sliced thinly
handful of parsley, chopped
1 celery stalk, sliced thin
sea salt


Preheat oven to 350.
Spread out a large sheet of heavy duty aluminum foil.
Pour some of the oil into the middle.
Dip each potato slice into the oil and leave on the foil.
Sprinkle the rest of the ingredients on top of the potatoes.
Drizzle a bit more oil on top.
Season with a generous ammount of sea salt.
Fold the aluminum foil over the food.
With another large sheet of foil wrap the food one more time.
Bake for 45 minutes or until potatoes are done.
