Zuni Stew

Hardy Bean Mexican Soup

Ingredients:

1 yellow onion,diced
1 bell pepper,chopped
1-2 dried gualitto or chipotle
1-3 pablano or anaheim chilies,diced small
(use spoon to seed chilies)
1-4 fresh jalapenos,diced small
1 tsp oregano
1 1/2 tsp cumin
2 tbl chili powder or hot sauce
1 large can of corn(16 oz)
1 large can pinto beans(16 oz)
2 cans yellow hominy(32 oz)
32+ oz vegtable broth
2 limes,juiced
1 cinnimon
3/4 round mexican chocolate

Garnish:
cilantro,1 bunch just leaves
mexican or sour cream
crumbled tortilla chips

Directions:

Spray large pot with cooking spray(can go in crock pot)
Sautee onion,bell pepper,chilies,and spices(except for the cinnimon stick) in a very small amount of oil. Add canned stuff. Add lime juice, cinnimon stick, anddried pepper(s). Boil then reduce to simmer for 1 and 1/2 hours. Before serving soup, melt Mexican chocolate into soup. serve with cilantro, a dollop of sour cream,and crumbled corn chips.
