gluten free/casein free rice pudding. The vanilla can be omitted for salicylate free.
4 cups water
2 cups short grain white rice, uncooked (we use sushi rice)
3/4 C sugar
2 tsp vanilla
2 tsp maple syrup
Add water and rice to a large pot and bring to a boil. Cover, reduce heat to low and cook for 25 minutes.
In a bowl add the rest of the ingredients and mix.
When the rice is finished turn heat up to medium and slowly add the liquid, stirring.
Cook for about 5 minutes stirring the whole time.
