THREE CHEESE ENCHILADAS
Easy to make & fast! Really tastes good too.
Serve with a tossed salad and you have a meal.
Ingredients:
THREE CHEESE ENCHILADAS
1½ cup (6oz) Monterey Jack cheese, shredded
1 ½ cup (6oz) Sharp cheddar cheese, shredded
1 pkg. (3oz) cream cheese, softened
1 cup salsa (I used mild)
¾ cup chopped onions (can use green onions instead)
1 pkg. 8 inch corn tortillas [make sure they are wheat & gluten free]
1 small can of sliced black olives
Directions:
Combine softened cream cheese, Monterey Jack cheese, cheddar cheese, 1 cup of salsa, onions; MIX well.
Spoon ¼ cup cheese mixture down the center of each tortilla. Roll and place, seam side down in a 13 x 9 inch baking dish.
Spoon another 1 cup of salsa over the top, plus another cup of shredded cheddar cheese.
Bake 350* about 20-30 minutes
You can serve with sour cream if you want
