Spelt Fish

Catfish or other white fish baked with Mexican seasoning. My whole family loves this fish and it has become a favorite to fix for guests too.

Ingredients:

Catfish or other white fish
Spelt Flakes cereal
butter, melted
red pepper flakes
cylantro, fresh or flakes

Directions:

Prepare pan by lining with foil.
Crunch spelt in a plastic bag with rolling pin and pour onto wax paper.
Dip catfish into butter, then coat, one side only, with spelt flakes. Place in pan on foil. Sprinkle with red pepper flakes and cylantro. Bake at 350 degrees for about 30 minutes or until crisp.

Note: I have also used flesh cylantro, onion, and tomatoes on this fish. It is important to put it on the fish the last 10 minues to keep it from burning.
