Gluten-Free \"Oatmeal\" Cookies
These cookies are a Gluten-Free adaption of your traditional Oatmeal Cookies
Ingredients:
Gluten-Free “Oatmeal” Chocolate Chip Cookies
Liquid Ingredients:
½ cup Butter 1 Egg ¼ Cup Water
1 tsp Stevia 1 tsp Vanilla
½ Cup Rapadura or Sucanat
Dry Ingredients:
1 cup Gluten-Free Flour* 1 tsp Salt
½ Tsp Bkg Soda 1 Tsp Cinnamon
¼ Tsp Nutmeg
Add In:
3 Cups Rice Flakes
2 Cups Gluten-Free Chocolate Chips
* Gluten-Free Flour:
Mix 3 Cups Rice Flour, 1 ½ cups Tapioca Flour, 1 Tblsp Xanathan Gum
Directions:
Set oven to 350
Cream Liquid Ingredients.
Combine Dry Ingredients in separate bowl. Beat into Liquid Ingredients mixture.
Add the \"Add In\" ingredients and mix well. Form dough into balls with hands. Place on cookie stone or greased cookie sheet and bake 12-15 minutes. Let cool for 2 minutes before removing to rack to cool.
