Quinoa, bean, and veggie salad

Main dish vegan salad

Ingredients:

quinoa
broccoli
carrot
zucchini
kidney beans
olive oil
salt

Directions:

Cook quinoa according to package directions (much faster than brown rice at only 10 minutes). Chop assorted veggies - I chose broccoli, carrot, and zucchini. Once cooked mix together the veggies, kidney beans, olive oil, and a little salt.
