Protein packed dinner salad

large dinner salad

Ingredients:

romaine lettuce
spinach
carrot
red cabbage
broccoli
kidney beans
sunflower seeds
olives

Dressing: 1 tbsp each of olive oil and rice vinegar or lemon, pinch of salt

optional: spices for dressing (I\'d recommend dill, or whatever else you enjoy)
cashews

Directions:

chop vegetables into bite size pieces. Add beans, seeds and if using, nuts. place dressing ingredients into a small plastic container and shake until blended.
