Corn Bread

Seems a little bit more gummy than traditional recipes but was a hit with my family.


3/4 c brown rice flour
3/4 c white rice flour
2/3 c granulated sugar
1/2 c yellow corn meal
1T baking powder
1/2 tsp salt
1 1/4 cup rice milk
2 tsp xantham gum
4 T water
1/3 c canola or vegetable oil


Mix all dry ingredients. Add wet ingredients and mix well. Pour into paper muffin cups and bake for 18-20 minutes in preheated 350 degree oven.
