MeLissa's Chocolate Chip Oatmeal Cookies

My family's favorite cookie recipe - modified so i can eat it! It's very important to let the cookies set on the cookie sheet for a while after they come out of the oven unless you want cookie crumbles!


1 c. butter
1 c. brown sugar
1 c. sugar
1 Tbsp. vanilla
1 c. oat flour
1 1/2 tsp. baking soda
1/2 tsp. salt
3. c. oatmeal
1/2 c. walnuts, chopped
2 3.5 oz. dark chooclate bars, coarsley chopped (with 57% cocoa


Combine butter and sugars until creamy. Add vanilla and mix well.
Sift baking soda, salt and flour together and add to butter and sugar
mixture, mixing thouroughly. Add oats, nuts, and the chocolate bar
pieces and mix well.

Place walnut sized balls onto baking sheet coated with cooking spray.
Bake for 10 minutes at 350F. Let cool for 5 to 10 min. on cookie
sheet before removing to cookie racks.

Note: Most chocolate chips contain soy lechtin which I am sensitive
to. If you're not sensitive to soy, you can substitute semi-sweet
chocolate chips for the chocolate bar. If you are sensitive to soy,
Trader Joe's organic truffle chocolate bars exclude it.
