Cherry Birthday Cake

A basic cake recipe made with cherries. Other fruit could be substituted. No wheat, eggs or soy.

Ingredients:

1/4 cup butter
1/2 cup brown rice flour
1/2 cup wheat-free flour blend
3/4 cup powdered sugar
1/2 tsp xanthum gum
1 1/4 tsp baking powder
1/8 tsp salt
1/2 cup + 2 T water
1/2 tsp vanilla
1/2 cup milk
1 1/2 tsp vinegar
1/3 cup chopped fresh cherries

Directions:

Grease 4 mini-fluted cake or 4 mini-bundt pans. (An 8-in round cake pan could probably also be used.) Preheat oven to 325 F (160 C).

Mix dry ingredients together. Cream butter. Alternate adding dry ingredients and water. Add vanilla. Beat well.

Add milk and vinegar and beat the batter smooth. Fold in the cherries. Pour into the baking pan. If there are empty cake pans (mine has 6) add a little water in the empty pans.

Bake in preheated oven for 35-40. Toothpick should come out clean. Cool in pan for a minute then on a rack. Frost or add a glaze.
