French toast with apples

Baked French toast with apples and cinnamon

Ingredients:

4 slices rice bread, sliced into quarters
2-3 eggs (use less eggs if bread is more crumbly)
3/4 cup rice milk
2 apples, sliced
2 tsp. cinnamon
3 tbsp. brown sugar
3 tbsp. rice flour

Directions:

1. Preheat oven to 350 F.

2. In small bowl, beat eggs. Add milk, 1/2 tsp.cinnamon, and 1 tbsp brown sugar and mix well.

3.. Pour mixture into greased square baking dish and add bread, and apples. Soak bread until it absorbs mixture.

4. In small bowl combine rice flour, remaining brown sugar, and remaining cinnamon. Mix with a fork until crumbly. Sprinkle over top of bread and apples.

5. Bake in preheated oven for 35 to 40 minutes until browned.
