easy banana cake
suitable for birthday cake when two 8" cakes are put together. My kids love it also eaten fresh from the oven. You can substitute apple butter or even apple sauce for the banana.
1.5 cups rice flour (brown)
0.5 cups brown sugar
1 teaspoon baking soda
0.25 teaspoon vitamin C crystals (buy at the health food store in Vitamin section)
2 ripe bananas (about 1 cup) or 1 cup apple butter or apple sauce
0.25 cup of canola oil
1 cup of apple juice (use less if using apple sauce or apple butter)
In a medium bowl combine the dry ingredients-rice flour, sugar, baking soda, and vitamin C crystals. Stir together.
In a 2 cup measuring cup, pour out 0.25 cup of oil, add and mash the bananas or pour the apple butter or applesauce, then fill the measuring cup with apple juice to the 2 cup line
Add the wet ingredients to the dry. Stir well, then pour into a non-stick 8" round pan. Double the recipe if you want to make a double layer cake.
Cook at 350degree for 30minutes. Cool and remove from pan.
I make the two layer cake with a middle layer of fig jam or other suitable jam of your choice. You can sprinkle powdered confectioner's sugar on top once it has cooled. Or frost with frosting of your choice.
