Wheat And Dairy Free Cookies


3 eggs
1-1/4 cups packed brown sugar
1 cup white sugar
1 tsp. vanilla
2 tsp. baking soda
1/2 cup butter
1 1/3 cups peanut butter
4 cups rolled oats
1/2 cup semisweet chocolate chips
1/2 cup caramel chips
1/2 cup currants
1/2 cup pecan pieces


Preheat oven to 350 degrees F. Lightly grease cookie sheets. Cream butter, peanut butter and sugars together. Add eggs one at a time, then add vanilla. Mix oats and baking soda separately, then stir into batter. Mix in remaining ingredients. Drop heaping Tbsp. onto cookie sheets. Bake for 12-15 min.
