Cookies for the kitchen-impaired
These are simple to prepare and offer flexibility in the ingredients.
2 cups sugar
1 cup cake meal
1 cup potato starch (or corn starch)
1/2 tsp. salt
dash of vanilla
1 cup oil (safflower, sunflower, or corn are best)
chocolate chips and/or nuts (optional)
1. Mix ingredients by hand.
2. Refridgerate overnight.
3. Preheat oven to 325.
4. Spray a cookie sheet with cooking spray.
5. Drop by teaspoonful and bake until edges are brown.
