Eggfree Chocolate Ice Cream
1/4 Cup Shortening
1/4 Cup Sugar
1 Cup Soy Milk
1 TBSP Jello Cook & Serve Vanilla Pudding Mix
1 Ener-G egg substitute
1/8 Cup Sam\\\'s Choice semi-sweet Chocolate Chips ( can purchase at Wal-Mart)
melt shortening over medium heat, add sugar and disolve, add ener-G egg, milk and pudding mix. Heat on medium stirring contantly. Heat until soft boil. Reduce heat and add Sam\\\'s Choice semi-sweet chocolate chips. Stir until melted. Remove from heat and let cool.
Put in freezer safe container and let freeze overnight. The next day remove from freezer and let soften. Mix with a mixer until creamy.
Let soften before serving. Makes approximately 2 1/2 cup servings.
Use within 7 days.
