Chocolate Peanut Butter Bars
Gluten free, dairy free and egg free recipe!
1 cup peanut butter
1 cup light corn syrup
1 cup sugar
1/2 cup chopped peanuts
8 cups gluten free cocoa rice crispies
2 cups gluten free/dairy free semi-sweet
Pour peanut butter, corn syrup and sugar into a medium sized sauce pan and heat on stove at Medium high for about 8 minutes. Stir constantly. Add the peanuts and stir.
Pour cereal into a large mixing bowl then stir in peanut butter mix. Stir until well mixed, but do this quickly so that it doesn't set up in the mixing bowl.
Spray a 9x13 cake pan with cooking spray then pour the cereal mix into the cake pan. Spray a rubber scraper with the cooking spray then spread the cereal mix until it is compacted in the cake pan and looks smooth.
Pour the chocolate chips into a microwaveable bowl. Heat the chips for a minute at a time until they are completely melted. Then stir, and pour on top of the cereal mix. Set in the fridge for 30 minutes or untill set up. Cut into squares and enjoy!
Warning- these are yummy but very rich.
