Yummy Rice Skillet

Easy quick rice skillet

Ingredients:

5-6 cups steamed rice
1 1/2 cups left over cooked roast beef
2 cups frozen peas and carrots
2 TB non-dairy margarine
1 tsp black pepper
1 tsp dried thyme

Directions:

Melt the margarine in a large skillet over medium heat. Add the rest of ingredients, cover and cook at medium high for about 7-8 minutes; stir occasionally. Serve
