Fragrant Split Pea Soup

Split pea soup is enhanced with fragrant rosemary and fresh lemon juice for a refreshing twist on an old favorite


1 pound split peas
1 large onion, diced
Olive oil
Salt and pepper
Juice of 1 lemon
1 large sprig fresh rosemary or 1/2 tsp. dried


Heat a large, heavy-bottomed pan over medium-high heat. Add olive oil just to cover bottom of pan. Saute onions until translucent. Add other ingredients plus about 5 cups water. Bring to boil and stir. Lower heat and simmer about 1-1/2 hours or until smooth. I like to remove about half the soup and puree it in a blender or food processor until smooth, then stir it back into the pot.

Garnish with a bit of fresh rosemary.

For a protein boost, add up to 1/4 cup of dried milk or protein powder just before pureeing.
