Yummy and high in protein, my son get less of a blood sugar rush that way.
1 cup of egg whites (whole eggs are ok too)
2 T. oat bran
2 T. spelt pancake mix
frozen berries warmed up (sugaring is optional)
oil or cooking spray of choice
Mix egg whites with bran, pancake mix and cinnamon with wire wisk. Pour 1/3 cup into heated and greased frying pan, turning pan in a circle to spead batter into thin crepe. Heat till almost cook through, then flip for the last few moments of cooking. Fold crepe into quarters and cover with berries and juice.
