Walnut/Pecan Breakfast Cookies

High in protein, low in sugar light on-the-go breakfast treat.


1 1/2c Walnuts or Pecans (ground)
1 1/2t Cinnamon or to taste (stick can be ground along w/nuts)
1/4t Cardamom (fresh ground)
Dash of Salt
2 Egg Whites whipped till stiff (can be sprinkled w/Cream of Tartar to help hold stiffness)
1 very ripe Banana
2 Drops of Stevia (or to taste)
1/2t butter (optional)


Heat oven to 350
Beat Egg Whites w/electric mixer or hand mixer till stiff set aside
Using same beater mash Banana then add Salt, Stevia, and Butter and mix till creamy. Add Ground Walnuts or Pecans and mix well. Fold in whipped Egg Whites. Drop teaspoon full on nonstick cookie sheet and gently pat to 1/2 inch thick. Bake for around 12 to 16 minutes. Treats are light as a feather and high in protein.
(Try unsweetened applesauce also.)
