Sugar Free Homemade Mayonnaise

Easy to make and will last at least 2 weeks in the fridge.


1/2 tsp salt
1/2-1/4 tsp dry mustard
1/2-1/4 tsp paprika
1 egg yolk
2 Tbsp vinegar
1 cup salad oil
1 Tbsp lemon juice


Mix dry ingredients and then blend in egg yolk. Add vinegar and blend in with hand blender ( or regular blender ). Add about a teaspoon of oil at a time. Alternating last bit of oil with lemon juice.

Makes about 1 cup.
