Egg Yolk Sponge Cake
Great way to use left over egg yolks from another recipe.
4 egg yolks, room temp.
2 Tbsp warm water
1/2 cup sucanat or sugar (can use Stevia)
1/2 cup all-purpose flour
1/2 tsp cream of tartar
2Tbsp hot milk
1/2 tsp baking soda
In mixing bowl beat egg yolks and warm water until thick and lemon colored. Add sugar gradually, beating until disolved.
Add flour, cream of tartar and fold in.
Mix milk with baking soda. Fold into batter.
Spread in 8x8 inch pan.
Bake at 350 for 25-30 min. Until toothpick in center comes out clean.
