Spicy nacho cheese dip

Soy and dairy-free, high in protein, easy one-bowl preparation

Ingredients:

2/3 C nutritional yeast
1/3 C vital wheat gluten flour
2 T cornstarch
1 t chili powder
1/4 t garlic powder
1 t salt
1 T prepared mustard
1/4 C green jalapeno salsa (I use Mrs. Renfro's brand)
1 1/2 C water

Directions:

In medium microwave-safe bowl, mix together all dry ingredients. Add mustard, salsa, and water and stir well. Microwave until mixture thickens (5-7 minutes) stirring at one-minute intervals. Great with chips, burritos, etc. Store in refrigerator.

Caution: As written, this recipe is VERY spicy. If you have a more sensitive palate, reduce/eliminate the chili powder and/or use a milder salsa.
