Pan cookies made with only natural ingredients
and no sugar!
1 c oats
1-2 tsp stevia (depending on desired sweetness)
1/2 c oat milk
1 tsp pure vanilla
1/2 cup stick butter or margerine
1/2 cup carob powder (chocolate baking powder can also be substituted, in this case, only 1/4 cup is needed.)
1/3 c unsweeted coconut (if desired)
pinch of salt (if unsalted butter or margerine is being used, also only if desired)
Bring to a boil vanilla, oat milk,butter, stevia, and carob powder, and desired coconut. After a few seconds of boiling, remove pan from stove quickly adding oats to still extremly hot liquid letting the oats soak in the liquid. Quick oats are much easier to use since they take much less time to swell.
After all ingredients are stirred together and all oats are covered, flatten mixture in a small cookie dish or pie pan and refrigerate for 15-30 minutes.
