Garlic Black-Eyed Pea Spread
1 cup canned or pre-cooked black-eyed peas
2 cloves garlic, minced and lightly sauteed in olive oil
1/2 tsp cumin
1/8 tsp ground red pepper
Mash black-eyed peas with a fork. Add garlic, cumin and spices. Blend until combined. Add more spices, parsley, lemon juice, water, salt and pepper until taste and desired thickness are achieved. Use in sandwiches or as a dip for vegetables or chips.
