Popeye's Spinach Soup

Spinach contains carotene, vitamin C, calcium, and phosphorus and is higher in protein than most vegetables. This is a nice light soup that is a good appetizer to a heavier meal.


4 cups spinach, trimmed, washed, and chopped (don't chop it up too much)
2 Tbs extra-virgin olive oil
1 small yellow onion, chopped
3 medium cloves of garlic, finely chopped
3 medium tomatoes, peeled and chopped
Salt and pepper
3/4 pound spaghetti broken into pieces
Parmesan cheese


Put the spinach leaves into a pot with about 3 cups of water. Cover and cook over a medium heat, stirring occasionally. When the leaves have wilted, transfer them to a bowl and set them aside.

In a saucepan, heat the oil and add the onions and cook them for about 2 minutes. Add the garlic and continue cooking for another minute. To this add the spinach, tomatoes, and 15 cups of water. Bring the mixture to a boil; add salt, pepper, and spices to taste. When it is boiling, add the spaghetti. Reduce the heat and simmer until the pasta is soft.

Serve with the cheese as a garnish.
