Sugar free carrot cake

I make this whenever I juice up a few pounds of carrots (using the leftover carrot pulp.) It makes a very yummy treat!

Ingredients:

2 cups flour
1 t. baking powder
1 t. baking soda
1 t. cinnamon
1/2 t. salt (optional)
1 1/2 cupts oil
4 eggs
1 1/2 cups honey or maple syrup
3 cups pureed carrot
1/2 cup nuts
1/2 cup raisons (I like the golden variety)

Directions:

Preheat oven to 350. Mix wet ingredients and dry ingredients separately, fold wet into dry. Pour mixture into oiled baking pan, bake for 35-40 minutes.
