Mandarin Almond Rice


4 C water
2 C uncooked rice
tsp salt
tsp ginger
1 small onion chopped
2 C sliced mushrooms
cubed cooked ham (optional)
sliced almonds
1 can mandarin oranges
1 6 oz pkg pea pods
soy sauce, if desired


Cook rice in water with salt, ginger and onions, 20 minutes. Saute mushrooms in a little butter. Cook pea pods according to package directions. Add mushrooms, pea pods, ham, almonds, mandarin oranges to rice just before serving. Season with soy sauce if desired.
