Sweet and Sour Meatballs

You could probably make meatballs for other recipes using this method which doesn't require eggs


1 lb ground beef
1 TBS cornstarch
1 medium onion chopped
1 TBS oil
1 can pineapple chunks (reserve liquids)
2 c pineapple juice and water
6 TBS cornstarch
3 TBS vinegar
C sugar
1 TBS soy sauce
1 lb carrots sliced
cooked rice


Form ground beef into balls with cornstarch, onion, salt and pepper. Brown in a skillet. In a saucepan, combine oil, pineapple juice/water mixture, cornstarch, vinegar, sugar and soy sauce. Heat and stir constantly until thickened. Add to meatballs. Simmer 10-20 minutes. Steam carrot slices in microwave 10 minutes on high. Add carrots and pineapple chunks to meatballs just before serving. Serve meatballs over rice.
