Vegetable Soup


c pearl barley
3 C water

64oz water or broth
2 celery ribs chopped
1 green pepper chopped
1 medium onion chopped
2-3 carrots sliced
1 envelope onion soup mix
tsp garlic powder
tsp pepper
14 oz can diced tomatoes, undrained


Cook barley according to package directions 50-60 minutes.

Combine all ingredients except tomatoes in a pot. Boil 15-20 minutes on low heat until vegetables are tender. Add tomatoes and cooked barley. Serve immediately.
