Spanish Tomato Soup

This dish is popular with any age group because it is so customizable!


2 TBS Nucoa margarine melted
1 TBS olive oil
2 C onion chopped
3 TBS flour
1 16 oz can tomatoes chopped
4 14 oz cans beef broth or 7 bouillon & 7 c. water
1 clove garlic minced
1 TBS vinegar
½ tsp pepper
½ tsp oregano
½ tsp tarragon
1 TBS worcestershire sauce
¼ tsp cumin


Saute onions and garlic in oil. Blend in flour. Add tomatoes and broth. Add spices and bring to a boil.
Serve immediately.

Put an assortment of “things” in a bowl and pour soup over.

Suggestions for “things”:
sauteed shrimp, ham cubes, cooked carrot wheels, mushroom, hard-boiled eggs, cheese cubes, garbanzo beans, olives.
