Bitter Greens with Sweet Cashews

Colorful, fragrant, quick, easy, and low in calories...


olive oil
1 onion, chopped
1 tablespoon finely chopped garlic
1 tablespoon finely chopped ginger root, or 1 tsp ginger
1 yellow or red bell pepper, chopped
1/2 cup cashews
1/4 tsp or more cayenne pepper
2 5-oz bags Dole spring mix with herbs or other mixed salad greens


Heat about 1 tablespoon olive oil in a large frying pan. Stir fry the onion for 1 minute, then add the garlic, cayenne, and ginger. Stir fry about 20 seconds. Add the cashews and bell pepper and stir fry for a minute. Add the salad greens and cayenne and stir fry about 2 minutes, until the greens are no longer crunchy. Salt to taste and serve immediately. Very good with rice.
