1 Cup White Rice Flour
1 Cup Rice Milk (home made)*
1/4 cup Maple Syrup
Piece of Wax paper
Mix equal parts white rice flour and rice milk. Stir in Maple Syrup. Pour mixture in a 8x8x3 cake pan lined with wax paper. Place cake pan in larger pan filled halfway with water. Bake in oven at 350 for 30 minutes or until the top cracks like dry skin. Put on wire rack to cool. Remove wax paper. Use cookie cutters to cut out nice thick shapes. (Phoebe's favorite is doing a dog and a bone) Dip in maple syrup.
*if you are NOT going to make home made rice milk, at least make a 'slurry' rice mixture, using rice and water, mixed in a cuisinart into a desired consistency. Otherwise this recipe won't work.
