Mapley Pecan Pie

VICTORIA'S HEALTHY HOLIDAY RECIPE Here is an alternative to the regular 'corn syrup' variety of pecan pie.


1 uncooked pie shell (try to get or make the crust with whole wheat flour and no hydrogenated oils)
1 1/2 cups chopped pecans extra whole pecans
4 eggs
1/2 cup Sucanat (dehydrated cane juice)
1 1/2 cups pure maple syrup
1 teaspoon pure vanilla extract


In large bowl beat the eggs slightly. Add the sucanat, maple syrup and vanilla. Mix well. Add the chopped pecan and mix again. Pour into an unbaked pie shell. Top the pie with whole pecans and arrange them neatly in a pattern. Bake in a 350 degree F. oven for 55 minutes. Let cool completely before serving.
