Old Fashioned Gravy
VICTORIA'S HEALTHY HOLIDAY RECIPE
3 tablespoons extra virgin olive oil
3 tablespoons whole wheat pastry flour
2 cups broth, warmed to a simmer
sea salt and pepper to taste
Heat the olive oil in a saucepan over medium heat. Add the flour and blend well over low heat, 3 to 4 minutes or until lightly browned. Remove saucepan from heat. Slowly pour in the simmering broth and mix well. Return to heat and cook until thickened. Use an immersion hand blender if the gravy is lumpy. Pour this gravy on top of potatoes or stuffing.
