Flourless Turkey Gravy



Pan drippings
some chicken broth or white wine
organic heavy cream (not half and half)
sea salt and pepper to taste


Pour all the pan drippings from the turkey into a container that separates the fat (make sure to scrape up all the browned bits from the bottom of the pan too). If you don't have a fat separator, you can spoon out the fat by hand. Put the drippings and browned bits (minus the fat) into a sauce pan and simmer until reduced by half. Add some broth or some white wine to this reduced mixture and mix well. Remove from eat. Make sure the mixture is not boiling and add some heavy cream, about 1/4 to 1/2 cup and taste it to how much salt and pepper it needs. Adjust the seasonings and serve. Note: If you add the cream to the reduced drippings when it is boiling, the cream will break so make sure the mixture is not at a rolling boil. If you like the giblets, you can add them to the reduced drippings, before adding the cream.
